The Must-Have Treat for Baby Showers

Hi! My name is Kaylynn Young – I am a lifestyle blogger at Among the Young from Orem, Utah. I have a Masters in special education and taught for seven years. Now, I am a stay at home mom to three kids (two on earth and one in heaven) and I LOVE to bake. Whatever keeps mama sane, right? Making desserts and experimenting in the kitchen is one of my most favorite things to do.

Today I will be posting one of my most favorite desserts ever. They are a MUST at any baby shower.

Can I tell you a secret? I HATE going to showers - especially my own. (Now that we mention it, I DO hate showering…. But that’s another topic for another day!) I understand throwing and going to a shower is a necessary evil, but I still don’t like it. One of the only things that makes a shower bearable is the food.  Cross my heart and hope to die.

Whenever I make something for a large group, I like to let people be independent. For example, have you ever gone to a party and there’s a beautiful cake on the table, but no one has cut it? The internal moral dilemma begins…

“The cake IS on the food table, but no one has cut it yet. Should there be pieces already cut? I don’t want to take the first piece. Better yet – I don’t want to cut it!”  
Moral of the story: for any kind of party or shower, stick with finger foods or small snacks. Basically, any type of bar or cookie is a safe bet.

My family favorite: lemon bars. Guys, this is THE BOMB DIGGETY. I’ve had other lemon bars, but I’ve been so spoiled. Nothing comes CLOSE to these bad boys. The crust is buttery and light – the perfect shortbread, the middle is ooey-gooey-lemony-fabulous, and the dusted powdered sugar on top is perfection. Sure, the powdered sugar is the tiniest bit messy (don’t breathe when you take a bite or you’ll be in a snow-storm!) but it’s worth it.

You’ll be amazed how EASY these are to whip up and how fast they’ll be gone. If you plan on making these for any event be sure to save yourself one at home because you may not get to try one!

Ingredients:

  • 1 c. butter
  • ½ c. powdered sugar
  • 2 c. flour
  • ½ tsp salt
  • 4 eggs
  • 6 TB lemon juice
  • 1¾ c. sugar
  • ⅓ c. flour
  • Powdered sugar (for topping)
